Smoked Salmon
This is barely a recipe but smoked salmon is so good it needs mentioning properly. Another of the great Scottish delicacies, it is very rich so you don't need too much for a starter.
INGREDIENTS: Smoked salmon slices - 200g (7 oz) or as much as you can afford, Lemon - 1 quartered, Brown bread - 4 thin slices buttered and cut into triangles
COOKING: 1. Arrange the smoked salmon onto 4 plates. Garnish with a lemon wedge and brown bread triangles.
