Muscovado Tablet
If you use caster sugar for this recipe it makes a white coloured version. Makes 75 pieces.

INGREDIENTS: Single cream - 225 ml (8 fl oz), Butter - 50 g (2 oz), Light muscovado sugar - 900 g (2 lb), Vanilla essence - * tsp.

COOKING: 1. Place the cream, butter and sugar into a large pan and bring slowly to the boil stirring.
2. Bring the mixture to soft ball consistency 116C / 240F stirring all the time. Remove from the heat, add the vanilla essence and beat the mixture until it begins to thicken and go grainy.
3. Pour into a greased 28 x 18 cm (11 x 7 inch) tin and leave for 10 minutes. Mark into squares with a sharp knife, then leave until set. Cut into pieces and store in an airtight container.
