Coconut Treats
Pack coconut ice in paper cones for special treats. Serves 12.

INGREDIENTS: Granulated sugar - 900 g (2 lb), Milk - 300 ml, Desiccated coconut - 275 g (10 oz), Red and green food colouring - few drops, Rose water - few drops, Peppermint essence - few drops.

COOKING: 1. Lightly oil two 18 cm (7 inch) shallow square tins. Place half the sugar and half the milk in a heavy based saucepan and heat gently until sugar has dissolved.
2. Bring to the boil and boil for about 10 minutes or until soft ball stage, 116C / 240F, is reached. Remove from the heat and stir in half the coconut.
3. Place half the mix in one tin. Add rose water and red colour to remainder and pour on top.
4. Repeat recipe with remaining ingredients, using green colour and peppermint essence. Leave until set then cut or break into pieces.
