Belvoir Crumpets
You could also serve this mixture grilled on toast. Makes 8.

INGREDIENTS:Stilton cheese - 175 g (6 oz) crumbled, Butter - 25 g (1 oz) softened, Port - 1 tbsp, Natural yogurt - 1 tbsp, Mixed nuts - 25 g (1 oz) chopped, Crumpets - 8, Walnut halves - 8, to garnish, Stuffed olives, to garnish, Fresh parsley, chopped, to garnish.

COOKING: 1. Combine cheese and butter. Stir in port, yogurt and nuts. Toast one side of each crumpet.
2. Spread the cheese mixture onto the untoasted side of the crumpets and grill until bubbling. Garnish with walnuts, olives and parsley and serve hot.
