bicarbonate of soda tones down acidity in stews - be VERY sparing though or it will taste icky! :-) add a tiny TINY pinch at a time and stir for AGES until there's no 'fizz' then taste and add a tiny pinch more until it tastes right - very laborious but it works if you are VERY patient.
