Muscovado is the original name for sugar made from sugar cane in Barbados. It is a dark brown moist sugar. The closest thing I've found to it is either piloncillo, sold in hispanic markets, or a mixture of local cane syrup and commercial cane sugar. You can substitute dark brown sugar, but you lose some of the complexity of flavor.
